Vegetarian Tacos – Meal Prep for a Delightful Mexican Dinner


Chorizo flavored seitan

8 oz chorizo flavored seitan

1 tbsp olive oil

Seasoned black beans

1 can black beans

1 tbsp olive oil

1/2 tsp cumin

12 leaves of romaine washed, sliced

8 cherry tomatoes rinsed, halved

48 tbsps chipotle ranch dressing

12 hard taco shells


1. Open the pack of chorizo flavored seitan and cook in a skillet with 1 tbsp of olive oil.

2. Drain and rinse the black beans, cook in a skillet with 1 tbsp olive oil and 1/2 tsp cumin.

3. Rinse off romaine and cherry tomatoes in a colander.

4. Chop the romaine into strips or shreds.

5. Slice the cherry tomatoes in half

6. Fill taco shells with seitan and black beans, then add romaine and cherry tomatoes, and drizzle chipotle ranch dressing on top.  Also drizzle dressing on any romaine that is on the side of the tacos.  (Use about 2-3 taco shells per serving).
