  1. In a large bowl beat together the three eggs until combined.
  2. Then add in the chopped and drained spinach.
  3. Next add the melted butter, garlic powder, black pepper, thyme, salt, and parmesan cheese.
  4. Finally, add the breadcrumbs and diced onions to the mixing bowl.

  1. Mix the ingredients until they are well combined.
  2. Then use a medium cookie scoop to shape 1-inch balls. Place them on a parchment-lined baking sheet about 1 inch apart.
  3. Bake in a preheated 350-degree oven for 30 minutes or until they are golden brown.
  4. Allow them to cool slightly before removing from the pan and serving.

Storing –  Store these spinach balls in an airtight container in the fridge for up to 3 days.

Reheating – To reheat, place them on a baking sheet and bake at 350 degrees for 10 minutes, or until warmed through. You can also microwave them for 30 seconds to 1 minute.

Freezing – These spinach balls freeze well. Place them on a baking sheet in the freezer until they are firm, then transfer them to an airtight container or freezer bag. They will keep in the freezer for up to 3 months. When ready to eat, thaw in the fridge overnight and then reheat as instructed above.

📚 Variations

  • If you don’t have Italian-seasoned breadcrumbs on hand, there is no need to run out to the store, you can use plain breadcrumbs and add some Italian seasoning to flavor them. 
  • Instead of using breadcrumbs you can swap it out and use your favorite boxed stuffing mix, we like the Stove Top brand, or for a low-carb option, you can use crushed pork rinds instead. 
  • Frozen spinach works best in this recipe, however, you can canned spinach that has been drained well or even fresh spinach in a pinch. 
  • You can also add in other delicious items like cooked bacon, green onions or even some diced peppers for more flavor.

  • I used to use paper towels to dry the thawed spinach a little to ensure that all the excess water was removed before I added it to these spinach bites.

  • I always recommend baking these delicious spinach balls on parchment paper so that they don’t stick to the pan or brown too much in the oven.

Ingredients

  • 3 eggs beaten
  • 10 ounces package of frozen chopped spinach thawed and drained well
  • 6 tablespoons melted butter
  • 1 teaspoon garlic powder
  • ½ tablespoon black pepper
  • ¼ teaspoon ground thyme
  • ½ teaspoon salt
  • 1 ½ cups Italian seasoned breadcrumbs or stuffing mix crumbs — see note
  • 1 cup grated parmesan cheese
  • ½ yellow onion diced very small

Instructions

  • Preheat your oven to 350 ℉ degrees.  Grease a baking sheet or vegetable spray parchment paper and set aside.

  • Combine all of the ingredients in a large bowl.

  • Using a medium cookie scoop, make 1-inch balls.

  • Place them on the baking sheet and bake for 30 minutes or until golden brown.

Notes

The original recipe called for stuffing mix crumbs (not cubes). Since those are difficult to find at times, I substituted bread crumbs. Please feel free to substitute back in the stuffing mix if you can find it.
