Before I went Vegan, my Waffle House order was 2 eggs, scrambled, with cheese, hashbrowns, scattered (on the griddle), covered (with cheese), smothered (in onions), diced (tomatoes), and capped (mushrooms), with dry wheat toast, and a side of grits (try to spare the lo-melt). I would top my greasy eggs with the greasy hashbrowns, top that with the somewhat greasy grits, and top that with their salsa (which is so good, my late husband and I bought a bottle once). I then mixed all that together for the most amazing omelette,, that I would then eat with the dry wheat toast. I switched up between their burnt coffee and their nasty fountain Diet Coke, with lemon. My late husband often got the waffle, with pecans, with his All-Star or Grand-Slam or whatever it was, slathered with meat, and would give me half of the waffle (sometimes all). Oh, yeah, he died just over 7 years ago of his final heart attack. Come some time in July, I'll be the age he was when he dropped dead in front of me on our front walk. Btw, I went Vegan since then. Not perfectly. I am no saint. Life is hard. Then you die. We can make it better for each other. That should be our daily goal. Just sayin'.
