We like to add a little extra to our egg mayo to make it absolutely delicious, in the example we have made on this blog we have added paprika and mustard to the basic ingredients. But that is optional.

It is best to remove the eggs from the fridge and let them come to room temperature before starting this recipe.
Hard Boiled Eggs
Place your eggs in the bottom of a saucepan and pour in tap water until they are submerged by about an inch.
Turn the heat to high and slowly bring to the boil. (should take about 8 minutes)
Once at a gentle rolling boil, lower the temperature to a simmer to prevent the eggs cracking.
Now set a timer for 8 minutes.
Cool The Eggs
Once the eggs are cooked, remove from the heat.
Drain the hot water and refill the pan with cold water to cool the eggs quickly. I find running under the cold water tap cools them down the quickest.
Peel and Chop
Tap the cooled hard-boiled eggs gently on a hard surface to crack the shell.
This makes it easier to peel off the eggshells.
Chop the whole egg, including egg yolks and egg whites, into small pieces.
Make Egg Mayo
In a large bowl, combine mayonnaise with a pinch of salt and pepper. (Optional): Add Dijon mustard and a pinch of paprika for extra flavour to the creamy sauce.
Combine well with a spoon.
Add your chopped eggs to the bowl with the mayo mixture.
