Vegan Million Dollar Spaghetti

Ingredients

  • 1 pound of spaghetti (gluten-free if preferred)
  • 1 jar (24 ounces) of vegan marinara sauce
  • 1 block (14 ounces) of firm tofu, drained and crumbled
  • 1 cup of vegan cream cheese
  • 1 cup of vegan sour cream
  • 1 cup of shredded vegan mozzarella cheese
  • 1/2 cup of nutritional yeast
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil or cooking spray.
  • Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the crumbled tofu to the skillet and cook for 5-7 minutes, stirring occasionally, until lightly browned.
  • Stir in the vegan marinara sauce and nutritional yeast. Allow the mixture to simmer for another 5 minutes, then remove from heat.
  • In a separate bowl, mix together the vegan cream cheese and vegan sour cream until smooth and well combined.
  • Spread half of the cooked spaghetti evenly in the bottom of the prepared baking dish.
  • Spread half of the vegan cream cheese mixture over the spaghetti layer.
  • Pour the tofu marinara sauce mixture over the cream cheese layer, spreading it evenly.
  • Add the remaining cooked spaghetti on top of the sauce layer, followed by the remaining vegan cream cheese mixture.
  • Sprinkle the vegan shredded mozzarella cheese evenly over the top.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let it cool for a few minutes before serving.
