Crock Pot Shredded Beef Burritos


This recipe for Crock Pot Shredded Beef Burritos has slow-cooked chuck roast simmered with Rotel tomatoes, green chilies, and onions for melt-in-your-mouth beef ready to be made into a burrito with your favorite toppings. Just like my favorite taco stand in Cali (without the ocean, anyway!)

I lived in San Diego for a short while years ago. One of the things I loved the most was the little taco stands. To this day when we visit, it’s our very first stop, Roberto’s (now known as Mr. Ruribertos Mexican Food)in Mission Beach. It doesn’t matter what time of the day our flight lands, we stop there first. (Thank goodness they are open 24 hours a day!)

 

My favorite thing has always been the shredded beef burritos. They have so much flavor and I am tickled that I have mastered the art of making them at home!

 

Crock Pot Shredded Beef Burritos

It doesn’t get any easier than dumping everything into the crockpot, setting it, and forgetting it. The crockpot works its magic simmering the beef along with the chili-infused tomatoes so it is melt-in-your-mouth tender and super tasty.

An easy recipe for a busy weeknight meal, a potluck create your own burrito buffet, or whenever you need a meal that doesn’t involve much prep. If you want to get the beef ready a few days before you want to serve it, go ahead and meal prep the beef during your meal prep session and it’ll be ready and waiting for you for up to 3 days.

Slow Cooker Burrito Beef

If you haven’t used your crockpot now’s the time to dust it off and make this slow cooker burrito beef. It is one of the easiest recipes you’ll make and is very versatile. Feel free to use the tender beef in different ways and assemble burritos with your favorite Mexican-inspired toppings or turn the beef into tacos or enchiladas.

I prefer my shredded beef burrito without other toppings, but my family chooses between any of these: shredded lettuce, cheese, sour cream, guacamole.

 

Ingredients for Crock Pot Shredded Beef Burritos

  • Beef chuck roast – This beef roast has a nice amount of fat which contributes to the tenderness and flavor of the meat when it’s cooked slowly.
  • Rotel tomatoes  – Choose whichever heat level you are comfortable with. Do not drain the tomatoes. 
  • Diced green chilies – Fresh or canned will both work. Do not drain the green chiles. 
  • Onion – Use a large onion, sliced. White or yellow will both work.
  • Beef bouillon – Powdered beef bouillon adds flavor. 
  • Flour tortillas – Use flour tortillas to make burritos or use corn tortillas, whichever you prefer.
  • Toppings of choice – Top with cheddar cheese, green onions, cilantro, sour cream, pico de gallo, pickled red onions, or any of your favorite burrito toppings. 

How to make slow cooked shredded beef burritos. 

These easy shredded beef burritos come together in one simple step with just a few simple ingredients. 

Dump everything in the crockpot and cook on high for 5 hours or until the meat is falling apart. (Or on low all day long)

Shred the meat and put it back in the crock pot until ready to eat. 

Steam the tortillas so they are easier to wrap and place the meat inside and wrap burrito style. Serve with your toppings of choice or as is. 

Leftover beef will keep in an airtight container in the fridge for 3-4 days. Frozen, in a freezer bag, it will keep for 3 months. It is best to store the meat on its own and not freeze the assembled burrito as it may get soggy. The tortillas themselves can also be frozen separately.

  • Instead of Rotel tomatoes, you can use tomato sauce but make sure to add some seasoning for more flavor. 

Tips & Tricks

  • Serve this slow cooker Mexican shredded beef with a side of refried beans or black beans for a traditional Mexican meal. 

  • Switch up the flavor and stir in chili powder or cumin or use enchilada sauce instead of the Rotel tomatoes. 

  • Give the beef burrito a little squeeze of lime juice for a more authentic Mexican flavor. 

  • Make sure to steam or warm the tortillas as warm flour tortillas are easier to work with.

  • 4 pound beef chuck roast
  • 1 10 ounce can Rotel tomatoes any “heat” you choose
  • 1 4 ounce can diced green chilies
  • 1 large onion sliced
  • 2 Tablespoons beef bouillon granuals
  • 8 flour tortillas burrito sized
  • toppings of choice
  • Place the roast into your crock pot. Dump the Rotel, bouillon ,onions, and green chiles over the top.

  • Cover and cook on high for 5 hours, or on low for 8 hours. Until the meat falls apart and shreds.

  • Steam tortillas. Place meat inside and wrap burrito style.

  • Serve with topping of choice, or as is!

Do not drain the Rotel or the chilies before you place them in the crock pot.
