These are an easy, delightful cookie to make when you need cookies in a pinch. They are not too sweet and have a hint of cinnamon. They can be made them with and without raisins, both work for me.  

Walnut Drop Raisin Cookies

Makes 12

1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4  teaspoon cinnamon
1/2 cup golden brown sugar
1/2 cup butter, melted
1 large egg
1 teaspoon vanilla extract
3/4 cup walnuts, coarsely chopped
1/3 cup sultan raisins

Directions: 

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. 

Combine flour, salt and baking soda and cinnamon together in a medium-sized bowl.

In another bowl, combine the brown sugar with the melted butter. Whisk in the egg and vanilla. Stir in the flour mixture and add the walnuts and raisins. 

Drop 12 dough dollops onto the prepared baking sheet and bake 12 minutes.
