I Made a Great Mexican Veggie Dish from Leftovers
Today, I made a great vegetarian Mexican food lunch from leftovers. Recently I made a Vegetarian Taco Skillet dish from Two Peas and Their Pod blog. When I made this dish, I got salsa and tortilla chips to have on the side. I had some of these left over, so I incorporated them into my lunch. Some black beans seasoned with coriander and paprika and a green bell pepper were also left over from another dinner I cooked. I sautéed the green pepper in a bit of olive oil, coriander, and paprika. Combining these various Mexican food items together with some shredded Mexican cheese on top made a really nice lunch.
This is a great example of how you can whip up something delicious from leftovers in your fridge. This really yummy, and the best part is, it only took a few minutes to prepare!
