Mint gremolata is awesome because it brings a burst of flavor and freshness to just about anything. It’s got that zesty mix of mint, lemon zest, and garlic that really livens up your dishes, making them taste super vibrant and delicious. In this specific recipe we toss in some marinated artichoke hearts for added flavor and texture, creating a perfect complement to grilled vegetables or fish. The combination is simply mouthwatering and adds a delightful Mediterranean twist to your meal.

What Is A Gremolata

Gremolata is a mix of finely chopped fresh herbs, garlic, and lemon zest. It’s like a flavor bomb you drizzle on food right before you eat it to make it taste super fresh and zesty. Gremolata is an old-school Italian condiment that adds a ton of flavor and color to your meal!

It’s frequently added to things like:

  • Seafoods like white fish, salmon, or shrimp

  • Vegetables in all varieties, blanched, roasted, grilled, raw

  • Pasta dishes like pasta gremolata

I originally made a Blanched Asparagus Salad with Mint Gremolata recipe using this sauce and it was a total success! While artichokes are not in a traditional gremolata recipe, I find that they add a really nice bite and tanginess to the sauce. But if you want to omit them you totally can!

How To Make Mint Gremolata Sauce

I’m not even going to break this one down, because it is THAT easy. You literally place all of the ingredients into a food processor and pulse away until you get a sauce! It should have some texture to it, but should easily drizzle off of a spoon.

It can be served cold or hot, and is frequently enjoyed at room temperature.

Can I Use The Oil That The Artichokes Are Stored In?

You may be wondering if you can use the olive oil that the marinated artichoke hearts are stored in. You can, but marinated artichoke hearts are frequently stored in canola oil. Canola oil is often extracted using high heat and chemical solvents, which may lead to the formation of unhealthy trans fats and the oxidation of the oil.

Since there are so many health benefits to consuming heart-healthy extra virgin olive oil, that is what I recommend using for the mint gremolata.

How To Store It

Store any leftover homemade gremolata in an airtight container in the refrigerator for 3 to 5 days. It is best the same day that you make it though.
