Kielbasa and Sauerkraut Skillet one-pan meal – Cooking at Clark Towers

If you are ever looking for a simple but delicious one pan meal, you should check this one out. It is super easy to make, very few ingredients and you don’t need to measure anything. You could even buy pre-chopped onions if you wanted to. Grocery stores are prepping veggies all the time now. Which actually comes in handy for my in-laws. They are in their 90’s and still on their own. We do all of their shopping and recently a lot more of their meal prep but for a time they would like to make a soup or two. I would grab them a package of pre-prepped onion, celery, carrot combo and a rotisserie chicken from the grocery store and they would be thrilled.  Now they are more into re-heat mode but good for them to still be making it happen.

img_4912I tried making sauerkraut a couple of times, the first time did not work out for me. I found the process too time consuming or maybe it was too much to remember to tend to it since it was in the pantry. The standard out of sight out of mind philosophy; anyway I threw that batch out.  The second time around seemed to have worked and I got to the canning portion of it but then I was too afraid to try it. So now I will just stick to buying a bag or jar of it from the grocery store.
img_4913I was introduced to this dish 6-7 years ago and I bet I make it at least once a year. I know that doesn’t sound like I like this dish but that couldn’t be further from the truth. We tend to eat so many different dishes all the time I don’t know if there is a dish we repeat weekly or even monthly, except maybe roasted chicken dinner, that is my favorite and I was for a time making it every Sunday. It’s been awhile for that dish as well, and with the weather around here changing it might be some time before we have that for a meal. I do know that this dish is waiting in the fridge for me to throw together and it will be happening sometime this week.
