Keto Breakfast Egg Sandwiches

The delicious combination of hard-boiled eggs, crispy bacon, creamy avocado, earthy aged Cheddar cheese and fresh salad not only tastes great, but also provides a balanced mix of protein, healthy fats and fibre. The tender texture of the eggs harmonises perfectly with the crispy bacon, while the avocado adds a creamy note and salad adds a refreshing touch. It’s naturally gluten-free and keto-friendly.

 

  • 5 Large eggs, at room-temperature
  • 5 slice Breakfast bacon
  • 45 g Kerrygold Cheddar
  • 1/2 Avocado, peeled and sliced
  • Salad leaves
  • Sea salt and freshly milled black pepper
  • Parsley, finely chopped (optional)
  1. Boil the eggs in a saucepan of boiling water for about 8-10 minutes, then peel and cut in half.
  2. Fry the bacon in a pan until crispy.
  3. Place the boiled eggs on a plate and season with salt and pepper.
  4. Place a salad leaf on an egg half, top with bacon, avocado and Cheddar. Now cover it with another egg half and secure with a finger food toothpick. Sprinkle some chopped parsley over if desired.
