CHICKEN PIE WITH VEGETABLE

Hello Everyone!

I hope everyone is well. Today I would like to share homemade Chicken Pie with you. This classic homemade chicken pie recipe features a soft, creamy and delicious blend of chicken and vegetables. Plus, it’s super easy to make, this homemade chicken pie is the classic comfort food, it’s uncomplicated, and you’ll want to make it over and over again. If you can make pastries, it’s worthy making your own. But if you do not have more time, you can use ready made ingredient instead of homemade pastry.

INGREDIENTS FOR FILLING:

400-500g chicken fillets, cut into 2cm pieces

1 medium onion, peeled and chopped

3-4 clove garlic peeled, crushed

1 carrot, peeled, sliced

1 zucchini washed, sliced

5-6 piece mushroom, cleaned, cut

1 medium tomato, washed and sliced

1 fresh green pepper, washed , sliced

1 tbs plain flour

1 cup chicken liquid stock or you can use 1 cup water if you do not have chicken stock.

1/4 cup frozen peas

1/4 cup whole milk

1 tbs butter

2 tbs olive oil

Salt, black pepper ground, red pepper flakes to taste

INGREDIENTS FOR THE PASTRY

400-500g plain flour

1/3 tsp salt or to taste

100g butter cold

4/1 cup water, cold, gradually added in the flour

1 egg beaten, for glazing

INSTRUCTION FOR THE PASTRY: Shift the flour and salt together into a large mixing bowl. Mix in just enough cold water to form a stiff dough. Turn this out onto a lightly floured surface and knead gently to form a smooth ball of dough. Wrap in clingfilm or place it in the mixing bowl and cover by a tea towel, chill for at least 15-20 minutes.

INSTRUCTIONS FOR CHICKEN PIE:

Heat oven to 250°C

1-In a medium saucepan, heat olive oil over medium heat. Add onion and salt cook 2 minutes, stirring frequently, until tender and add garlic, add chicken and fry it and add zucchini, carrot, mushroom, fresh green pepper then add butter and flour, Stir in flour until well blended and add tomato.

2-Gradually add and stir in broth and whole milk, cooking and stirring until bubbly and  bring to the boil, then reduce the heat and simmer until the chicken is cooked and thickened. This will take about 15-20 minutes, depending on the chicken. Add black pepper, red pepper on the chicken to seasoning and  remove from heat.Let it cool.

3-Roll out two-thirds of the pastry and  place the pastry in your pie pot or pie plate and add the cooled chicken mix.

4-Roll out the remaining pastry to make a lid for the pie, brush the edge with beaten egg and pinch the edges together to seal. ( Or use ready pastry, roll out the ready pastry and place it in your pot and put the cooked chicken on it and cover with the other pastry sheet.)

5-You can decorate the top of the pie and brush all over with beaten egg. Make a hole in the top of the pie to allow the steam to escape, then bake it in the preheated oven for about 45 minutes, or until the pastry is golden-brown.
