Healthy Double Chocolate Blender Muffins are a quick and easy way to get your chocolate fix, while being delicious and nutritious! They are packed with wholesome ingredients (including 2 cups of spinach!) and made in a blender, so there's no need to dirty any dishes, and they are ready in just 30 minutes. These muffins gluten-free, refined sugar-free and they are moist and fluffy, with a rich chocolate flavor. I like to make these mini sized because they are intensely chocolatey….but you can make full sized muffins and bake them longer, about 25 minutes.

Ingredients

  • 2 VERY RIPE medium bananas
  • 2 eggs
  • ¼ cup pure maple syrup
  • 1 tsp vanilla
  • 2 cups baby spinach
  • 1 1/3 cups blanched almond flour
  • ¼ cup cocoa powder
  • 1/3 cup rolled oats
  • 1 tbsp chia seeds
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ¼ cup chocolate chips, plus more for sprinkling on top
  • sprinkles, optional, for topping

Instructions

  • Preheat the oven to 350 degrees F. Line a mini muffin tin with muffin liners.
  • Add the bananas, eggs, maple syrup, vanilla and spinach to a blender and blend until completely smooth.
  • Next add in the almond flour, cocoa powder, oats, chia seeds, baking soda and salt. Blend until smooth.
  • Once the batter is smooth, stir in ⅓ cup chocolate chips by hand.
  • Scoop the batter into prepared muffin liners. Top with a few chocolate chips and some sprinkles on each muffin.
  • Bake for 15-18 mins or until the tester comes out clean.
  • Allow muffins to cool in the pan for a few minutes, then transfer to a wire rack to finish cooling.
