Glazed Ham Seasoned Tofu

1. Open the package of tofu, slice into six slices, and rinse in a colander if you like.

2. Lay the tofu slices out over a baking sheet.

3. In a small teacup or dish, whisk the liquid smoke, mustard, and maple syrup together to create a binder.

4. In a small to medium bowl, whisk the paprika, chili powder, garlic powder, ginger, cloves, salt, pepper, and brown sugar together for the spice rub.

5. Start drizzling the binder over the tofu slices with a teaspoon and/or paint it on with a brush.

6. Sprinkle 1/4 to 1/2 tsp of the spice rub over each slice of tofu and rub it evenly with a spoon or brush.

7. Preheat the oven to 375 degrees and bake the tofu for about 10 to 15 minutes.

8. Take the tofu out of the oven, flip with a spatula, coat the other side in the binder and spice rub, and bake again for 10 to 15 minutes.

Sautéed Greens

1. Peel the shallot, chop the ends off, make several fairly thin slices, then chop each in half.

2. Peel the garlic cloves, chop the ends off, slice thin, then mince into tiny pieces.  (A rougher chop might also work.  Whatever you prefer.)

3. Rinse and drain the chopped shallot and minced garlic in a colander.

4. Heat 2 tbsps of olive oil in a skillet or frying pan over the stovetop, then add the shallot and garlic and saute for a bit.

5. Open the box of greens, rinse and drain in a colander, then add to the frying pan with the shallot and garlic. Saute until the greens have wilted slightly, and the shallot and garlic have softened and become slightly translucent.
