WHAT INGREDIENTS DO I NEED?
- 8 oz manicotti noodles
- 1 lb ground chicken
- 24 oz marinara sauce
- 6 oz tomato paste
- 1 teaspoon minced garlic
- 2 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 2 tablespoon olive oil
- 16 oz shredded mozzarella cheese (divided)
- ½ cup grated parmesan cheese (divided)
- Optional: 2 tablespoon fresh basil or fresh parsley
HOW DO I MAKE EASY CHICKEN MANICOTTI?
Start by boiling the manicotti noodles until al dente, approximately 6-7 minutes. Drain and set aside for now.
In a large skillet, begin to heat olive oil. Add the ground chicken, continue to sauté for about 5 minutes, or until slightly browned and crumbled.
In a separate bowl stir together the marinara sauce, tomato paste, minced garlic, Italian seasoning, and onion powder.
Lower the heat for your ground chicken, add ⅓ cup of the marinara sauce mixture and simmer for another 5 minutes.
Remove the skillet from the heat and stir in ¼ cup of grated Parmesan, 1 cup of shredded Mozzarella and fresh parsley. Set aside to cool slightly.
Preheat your oven to 375 degrees F. Spread a thin layer of marinara sauce on the bottom of your baking dish. (I used a 9×13 baking dish and used about ¼ cup of sauce on the bottom).
Carefully fill your manicotti noodles with the seasoned chicken mixture and place them in your dish. Line your dish with as many stuffed noddles as you can. (I could fit 10).
If you have extra ground chicken from the skillet, pour it over top of the noodles. Then cover with the remaining marinara sauce.
Top with remaining cheeses. Cover with aluminum foil and bake for 35-40 minutes. Then remove foil and bake for another 5 minutes to brown the top.
