WHAT INGREDIENTS DO I NEED?

HOW DO I MAKE CAKE MIX LEMON CURD COOKIES?

Preheat your oven to 350 degrees F.

In a large bowl mix together the cake mix, oil and eggs until you have a smooth batter.

Scoop batter with a spoon or cookie scoop and place on a prepared baking sheet. Leaving a couple inches between each cookie.

Bake for approximately 10 minutes. Remove and immediately press down the middle with your thumb or spoon, to create an indention for the curd to be placed. Let the cookies continue to cool before adding the curd.

**One thing I learned while working on this recipe is you definitely don’t want to over bake your cookies. Just slightly under baking them is what gives them their soft insides. I typically bake mine for about 9-10 minutes but every oven varies. 

Once the cookies have cooled, spoon a small amount of lemon curd in the middle of each cookie. Then top with a dusting of powdered sugar.

Ingredients

  • 15.25 oz Lemon Cake Mix
  • 2 Eggs
  • ⅓ cup vegetable oil
  • ⅓ cup lemon curd (If you can find lemon curd, this Lemon Creme works great)
  • powdered sugar (optional)

Instructions
