Birthday Cake Ice Cream – Barefeet in the Kitchen


Vanilla sweet cream ice cream filled with chunks of birthday cake and plenty of sprinkles is as much fun to make as it is to eat!

This birthday cake ice cream is my current favorite flavor. And yes, I just declared a new favorite ice cream for at least the 10th time on this website. How could I possibly choose a forever favorite when I’m constantly trying new flavors to share with you?

Prior to making this ice cream, I don’t remember the last time I tasted a funfetti cake topped with sprinkles frosting. Let me tell you, this cake was a time machine back to my childhood. I remember enjoying these cakes so very much at birthday parties. (And there simply aren’t enough opportunities for funfetti cakes as adults – let’s change that, ok?)

Could I have made the cake and the frosting from scratch for this ice cream? Absolutely! Could you do that? You bet! That said, there are a couple of reasons why I didn’t mess with doing that for this ice cream. First, if I’m being honest, it felt like overkill for a batch of ice cream.

And second, I don’t think it will make that big a difference. Might it be even tastier? Maybe, but not enough that I was willing to work through three different recipes just to make the ice cream I was craving.

You’ll need the following ingredients to make this recipe:

While I am not typically a big fan of most sprinkles, I really like these sprinkles. They taste like little bits of frosting that melt in your mouth. They aren’t at all hard, waxy, or flavorless.

Homemade Birthday Cake Ice Cream

Funfetti cake is so reminiscent of childhood birthday parties that I couldn’t resist using the cake mix. If you want to make a cake from scratch, I highly recommend this one. Not only if you need to avoid gluten, but also because it remains the best white cake I’ve ever made or tasted.

If you’re a chocolate lover, Hershey’s chocolate cake can’t be beaten. And this coconut cake would be incredible in ice cream too.

If you want to make the frosting from scratch, I have a whole lot of options here to choose from. Fluffy chocolate buttercream, strawberry or blueberry frosting, salted caramel frosting, and peanut butter frosting are all popular.

You can even make homemade rainbow chip funfetti frosting, if you’re more motivated than I am right now.

Birthday Cake Ice Cream Recipe

To make a batch of birthday cake ice cream, start by baking the cake in a 9×13 pan, according to the package instructions. (Feel free to bake a cake from scratch, if that makes you happier.) Stir the frosting and set aside. When the cake has cooled, frost the cake.

Whisk together the cream, milk, vanilla, sugar, and salt. Pour into your ice cream maker and freeze according to the manufacturer’s directions.

While the ice cream is churning, slice the cake and freeze 3-4 servings worth of cake. Place the cake pieces in the freezer. When the ice cream is almost done churning, slice the frozen cake into 1-inch pieces.

When the ice cream finishes churning, scoop the ice cream into a freezer-safe airtight container, sprinkling cake pieces and sprinkles over each scoop. Freeze until firm.
