Happy April Fool’s Day!
We have a good time playing tricks on each other in our family every year. Of course, I prefer to do food themed pranks on my kiddos and this year I came across a fun idea online: Mashed Potato Chocolate Chip “Cookies”. I tested them out and they were pretty convincing! Scroll down for the recipe and I will share how well the prank worked as a dessert after dinner tonight.
April Fool’s Mashed Potato Cookies Prank
Makes around 2 dozen “cookies”
Ingredients
- 1 package 2 cups cheesy instant potatoes, cooked
- 3/4 cup 1/2 can black beans, drained
Instructions

Preheat oven to 350 degrees.

In a medium bowl mix beans and prepared mashed potatoes until combined.

Line a baking sheet and add small scoops of the mashed potato mixture in rows.

Make around 5 rows, 3-4 across.

Then press down lightly to flatten. They will not expand when baking.

Bake for 20-25 minutes until golden and crispy.

Serve warm as prank “chocolate chip cookies”.
Notes
Notes: I recommend cheesy potatoes so you get the appropriate light brown colored cookie look. If you use regular mashed potatoes add a few drops of yellow food coloring.
