Drunken Chicken – Recipe Girl


Here’s an easy recipe for Drunken Chicken. This dish has chicken breasts baked with a spiced-up sherry tomato sauce, and it’s topped with crunchy almonds.

Drunken Chicken

I love a really unique chicken recipe, and this one is definitely different. This has all kinds of delicious flavors going on. There are a lot of great spices mixed into the lightly sweetened tomato sauce. Golden raisins and slivered almonds added in are delicious!

🛒 Ingredients Needed:

  • boneless, skinless chicken breasts
  • all purpose flour
  • extra virgin olive oil
  • butter
  • onion
  • fresh parsley
  • canned, diced tomatoes
  • ground cinnamon and ground cloves
  • light brown sugar
  • sherry or vermouth
  • golden raisins
  • slivered almonds
  • salt and pepper

✏️ How to make Drunken Chicken:

  1. Preheat the oven to 375℉. Spray a casserole dish with nonstick spray (any size that will accommodate your 4 pieces of chicken).
  2. Season the chicken with salt and pepper and dip into the flour to cover all sides. In a large skillet, heat the oil and butter over medium-high heat. Sauté the chicken just until browned on both sides. Place the browned chicken in your prepared dish.
  3. In the same skillet, cook the onions, just until softened. Add the parsley, tomatoes with liquid, cinnamon, cloves, brown sugar, sherry, and raisins. Simmer, uncovered for 15 to 20 minutes, stirring occasionally.
  4. Pour the sauce over the chicken and sprinkle with almonds. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes.

➡️ Tips and Substitutions:

  • Try using fire-roasted canned tomatoes for your canned, diced tomatoes.
  • Sherry or vermouth will add a lot of flavor to this dish, but you can always use white wine or red wine, if you’d like.
  • Leave the nuts out of the dish if there are nut allergies.
