Parfait Recipe

On a road trip, we stopped for a quick breakfast at a fast-food restaurant. I ordered McDonald’s parfaits for all my kids and was shocked when they asked what that was.

How had I never made them parfaits before?! After explaining it was fruit, granola, and yogurt, they couldn’t wait to try it, and sure enough, they were hooked.

As a mom, it’s hard to find protein-packed snacks my kids actually love! And even harder to find ones with fiber (fruit) so making parfaits has been a huge win. They’re getting fiber and protein in their diet all while feeling like they’re eating a treat — win-win! We have parfaits for breakfast all the time now.

What is a parfait?

A parfait might sound fancy, but it’s simply layers of yogurt and fresh or frozen fruit layered and topped with granola.

And you know what? Parfaits aren’t just for breakfast; they can be anything layered into a dish, like this delicious brownie trifle or strawberry shortcake trifle.

QUICK TIP

What’s the difference between yogurt and a parfait? Yogurt is a stand-alone ingredient while a yogurt parfait is served in a glass with layered ingredients. Yogurt is the star of the recipe, but many add-ins such as fruit or granola, also are added in.

All the ingredients used in this recipe prepped out for easy assembly.

Storage And Make Ahead Tips

Yogurt parfaits are the perfect on-the-go breakfast or quick snack.

  • Make Ahead: You can prep ingredients a day ahead (washing and cutting berries and making homemade granola), but assemble the parfaits as close to serving as possible. Otherwise, the granola might get soggy and fruit becomes mushy.
  • Freezing: Don’t freeze this recipe. It doesn’t thaw well and the layers become soggy. That said, you can use frozen berries in this parfait.

Instructions

  • PREP: Wash and thoroughly dry the fruit. If the fruit is at all wet, it affects the taste of the parfait. Remove stems from any berries and thinly slice the strawberries. Toss together all of the fruit.

  • ASSEMBLE: Layer 1/3 cup vanilla yogurt into the bottom of 4 cups. Alternate layers of fruit, granola and then yogurt. Repeat layers until glasses are filled to the top.

  • EAT: Enjoy right after making to avoid soggy granola. Parfaits don’t sit or store well.
