Summer is coming quick in Minnesota and my kids LOVE our homemade jam as a snack with peanut butter and rice cakes. This is a low carb option for them – skip the rice cakes and use almond flour crackers if you’re keto/strict low carb!
Use on our crepes, 90 second bread or almond flour crackers!
Recipe:
2 Cups Strawberries
1 teaspoon Lime juice (1/2 lime squeezed)
2 Tablespoons sweetener
1/4 tsp Xanthan Gum
Heat over low to medium heat until strawberries smash. Add lime juice, sweetener and Xanthan gum.
If you want a smoother jam, blend it once it’s cool or use an immersion blender (careful if jam is hot – it can be easier to wait until it cools).
Makes 1 Cup, Serving size 1 Tablespoon
