Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 3 tbsp taco seasoning
  • 1 yellow onion diced (optional)
  • 1 cup chunky salsa of choice
  • ¼ cup water
  • ½ cup Trader Joe’s corn salsa
  • 1 bag Trader Joe’s avocado crunch salad
  • 1 cup Trader Joe’s crunchy dippers

Instructions

  • Heat a skillet to medium-high heat. Add 1 tbsp olive oil.
  • Add the ground turkey to the skillet along with 3 tbsp taco seasoning. Brown the meat, breaking it up as it cooks.
  • Once the meat has started to brown, add the diced onion.
  • Continue to brown the meat until it is no longer pink and the onion is translucent.
  • Add the salsa and water and stir until well combined. Let the ground turkey simmer for 3-4 minutes until the mixture has thickened and then remove from the heat.
  • In a large bowl, add the avocado crunch salad and toss with ½ cup corn salsa and desired amount of dressing from the packet.
  • Divide the salad mixture among 4 bowls, top with ground turkey mixture, additional corn salsa (if desired), crunchy corn dippers and a drizzle of dressing (if you have any remaining).
