Ingredients
For the Remoulade:
- 1 cup mayonnaise
- ½ tsp hot sauce
- 1 tbsp lemon juice
- ½ tsp paprika
- 1 dijon mustard
- 2 cloves garlic minced
- 1 tsp finely chopped pickles
- 1 tsp chopped capers
- 1 tsp worcestershire sauce
- 1 scallion minced
For the Seasoning:
- 1 ½ tsp kosher salt
- 1 tsp paprika
- 1.2 tsp garlic powder
- ¼ tsp cayenne
- ¼ tsp black pepper
For the Shrimp:
- 1 lb large peeled deveined + tail-off shrimp
- ½ tsp kosher salt
- ⅓ cup flour
- 1 egg
- ⅓ cup buttermilk
- 1 tbsp hot sauce
- 1 cup finely crushed tortilla chips
- ¼ cup cornmeal
- 1 cup avocado oil for frying
For the Tacos
- ¼ head of romaine lettuce finely chopped
- 2 roma tomatoes diced
- Flour tortillas (or gluten-free tortillas if needed)
Instructions

Prepare your remoulade by mixing the remoulade ingredients together. Set aside.

In a small bowl, mix together the seasoning ingredients.

In 3 separate mixing bowls, prepare your steps for frying; in bowl #1, mix together the ⅓ cup of flour and half of the seasoning. In bowl #2, whisk together the egg, buttermilk and hot sauce. In bowl #3, mix the other half of the seasoning with the crushed tortilla chips and cornmeal.

Season the shrimp with ½ tsp kosher salt. Then toss your shrimp in the #1 bowl of flour.

Then, dip the floured shrimp in the #2 bowl of the buttermilk mixture..

Finally, toss the shrimp in the crushed tortilla chip mix.

Repeat with all the shrimp.

In a heavy bottomed skillet, heat up the vegetable on medium heat.

Once your oil is ready to fry, gently place the shrimp in the oil without overcrowding. Flip after 1-2 minutes with tongs.

Place the fried shrimp onto a plate lined with a paper towel to drain excess oil.
