Ingredients

For the Remoulade:

  • 1 cup mayonnaise
  • ½ tsp hot sauce
  • 1 tbsp lemon juice
  • ½ tsp paprika
  • 1 dijon mustard
  • 2 cloves garlic minced
  • 1 tsp finely chopped pickles
  • 1 tsp chopped capers
  • 1 tsp worcestershire sauce
  • 1 scallion minced

For the Seasoning:

  • 1 ½ tsp kosher salt
  • 1 tsp paprika
  • 1.2 tsp garlic powder
  • ¼ tsp cayenne
  • ¼ tsp black pepper

For the Shrimp:

  • 1 lb large peeled deveined + tail-off shrimp
  • ½ tsp kosher salt
  • cup flour
  • 1 egg
  • cup buttermilk
  • 1 tbsp hot sauce
  • 1 cup finely crushed tortilla chips
  • ¼ cup cornmeal
  • 1 cup avocado oil for frying

For the Tacos

  • ¼ head of romaine lettuce finely chopped
  • 2 roma tomatoes diced
  • Flour tortillas (or gluten-free tortillas if needed)

Instructions

  • Prepare your remoulade by mixing the remoulade ingredients together. Set aside.
  • In a small bowl, mix together the seasoning ingredients.
  • In 3 separate mixing bowls, prepare your steps for frying; in bowl #1, mix together the ⅓ cup of flour and half of the seasoning. In bowl #2, whisk together the egg, buttermilk and hot sauce. In bowl #3, mix the other half of the seasoning with the crushed tortilla chips and cornmeal.
  • Season the shrimp with ½ tsp kosher salt. Then toss your shrimp in the #1 bowl of flour.
  • Then, dip the floured shrimp in the #2 bowl of the buttermilk mixture..
  • Finally, toss the shrimp in the crushed tortilla chip mix.
  • Repeat with all the shrimp.
  • In a heavy bottomed skillet, heat up the vegetable on medium heat.
  • Once your oil is ready to fry, gently place the shrimp in the oil without overcrowding. Flip after 1-2 minutes with tongs.
  • Place the fried shrimp onto a plate lined with a paper towel to drain excess oil.
  • Assemble your tacos and enjoy!
