Ingredients
- 1 ½ lbs boneless skinless chicken thighs cut into ½ inch chunks
- 1/4 cilantro roughly chopped
- 4 cloves garlic grated
- Zest from ½ orange
- juice from 1 orange (about 3 tablespoons)
- 2 tablespoons brown sugar
- 2 tablespoons avocado oil
- 1 tablespoon lime juice
- 1 tablespoon rice vinegar
- 1 ½ teaspoons sea salt divided
Instructions

Pre-soak your wooden skewers, if using (you can skip the skewers and simply cook the chicken on a sheet pan or in a pan on the stove if you prefer!).

If you’re using wood skewers, start soaking them!

Line a sheet pan with parchment paper. Set aside.

Preheat the oven to 425 degrees.

Place chicken in a large mixing bowl.

Combine the cilantro, garlic, orange zest and juice, brown sugar, avocado oil , lime juice, rice vinegar and 1 teaspoon salt in a small bowl.

Pour half of the sauce over the chicken and toss to coat; reserve the other half of the sauce for later.

Thread the chicken pieces onto skewers, and season with ½ teaspoon salt.

Bake for 10 minutes and then switch to broil for 4-5 minutes so the chicken is cooked through and is golden brown.

Brush the cooked chicken with reserved sauce. Serve chicken with rice, beans and a green salad.
