Pumpkin Apple Cider Muffins with Fall Spice Streusel


Perfect dessert for Halloween, Thanksgiving, or any day during the fall or winter seasons – Pumpkin Apple Cider Muffins with Fall Spice Streusel. After making my Apple Cider Cookies – Inspired by Taylor Swift Chai Cookies, I had leftover apple cider. I also noticed I had a can of pumpkin puree in my pantry. So I decided to make muffins with these ingredients and add some pizzaz with apple cider spices, sugar, and a streusel crumb topping.

Ingredients – Pumpkin Apple Cider Muffins

Flour: All-purpose flour or cake flour would probably work best. To be honest, I used a combination of bread flour and whole wheat pastry flour because that’s what I had in my fridge.

Sugar: Brown sugar and regular cane sugar. I used a combination of the two.

Spices: Cinnamon, ginger, cloves, and allspice. These are common apple cider spices and pumpkin pie spices, so they work really well here.

Pumpkin puree: For a pumpkin taste, use canned pumpkin puree.

Apple cider: Add apple cider for some apple flavor and extra sweetness.

Butter: Unsalted or salted butter will work.

Egg or egg white: I just used one egg white. You could also use an egg.

Baking powder and baking soda: I added a little baking powder and baking soda to help the muffins rise.

How to Make These Pumpkin Apple Cider Muffins

Get out a large bowl and whisk together a cup of flour, a cup of brown sugar, a tablespoon of cinnamon, a half teaspoon of ginger, and a fourth teaspoon each of cloves and allspice. In a glass liquid measuring cup, microwave half a cup of unsalted butter and pour it in the bow with the flour, sugar, and spices. Whisk everything together to make the streusel crumb topping and set aside.

In another large bowl, whisk together two and a half cups of all purpose flour or cake flour, three-fourths teaspoon baking powder, one-fourth teaspoon baking soda, a teaspoon cinnamon, half a teaspoon ginger, and one-fourth teaspoon each of cloves and allspice.

Melt a fourth to a third cup of butter in the microwave in a liquid measuring cup. Add that to a third bowl. Next, add the egg or egg white, half a cup of brown sugar, and half a cup of cane sugar and whisk together to combine. Then, add the can of pumpkin puree and three-fourths cup of apple cider and continue to whisk together. Fold the dry ingredients/flour mixture into the liquid ingredients and whisk to combine.

Get out a muffin tin and spray it with cooking spray. Add a little less than a tablespoon of the streusel crumbs to the bottom of each muffin space. Now spoon the muffin batter into the tin until it’s reached near the top, then top each muffin off with about a tablespoon of the crumb topping.

Preheat the oven to 375 degrees and bake the muffins for 20 to 25 minutes.
