This Japanese cucumber salad is a healthy, light and refreshing side dish that’s incredibly easy to make and simply delicious. 

Ingredients:

2 Japanese Cucumber 

1 tsp Salt

1 tbsp Dried Wakame Seaweed, soak to rehydrate

4pcs Crab Stick

1 tbsp Toasted Sesame Seeds 

Dressing:

3 Tbsp Rice Vinegar 

1 tbsp Dashi Powder

1 & 1/2 tbsp Sugar

Method:

1. Combine the salad dressing ingredients, heat and stir constantly until the sugar is completely dissolved. Remove from heat and set aside to cool.

2. Sprinkle the salt on cucumber slices, let it sit for 5 minutes then squeeze out the liquid.

3. Combine everything together, mix well and serve chilled.
