Healthy Double Chocolate Blender Muffins
Ingredients
- 1 ½ cups flour
- 1/3 cup sugar
- 1 ½ tsp baking powder
- ½ tsp sea salt
- ¼ cup milk
- ¾ cup vanilla Greek yogurt
- ¼ cup safflower oil
- 2 eggs lightly beaten
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ¾ cup chocolate chips
Instructions

Preheat oven to 375 degrees Fahrenheit and line a 12-cup muffin tin with muffin liners.

In a large bowl whisk together the flour, sugar, baking powder and salt.

Add the milk, Greek yogurt, oil, eggs vanilla and almond extracts and gently mix just until combined.

Fold in the chocolate chips, just until they’re distributed evenly throughout.

Portion the batter into the 12 muffin cups evenly and bake at 375 degrees Fahrenheit for 17-19 minutes, or until the muffins are cooked through.

Allow the muffins cool on a rack for 10 minutes before serving.
