Homemade Breakfast Pizza

I am always on the lookout for easy and delicious recipes for breakfast and this was a hit! We enjoy big breakfasts with homemade pancakes or waffles but sometimes I like to keep it more simple. This recipe is perfect to start or even end a busy day. Breakfast for dinner is popular around here, too. 

The crescent dough is the star because it gives you a buttery and flaky crust without making it from scratch. As a mom, I don’t always have the time and this shortcut is incredibly helpful without sacrificing flavor. I promise that even your pickiest eaters are going to love this breakfast pizza.

Recipe Ingredients

These are all of the ingredients I used for my breakfast pizza. Feel free to make it your own! 

  • Italian sausage: I use mild Italian sausage but you can also use hot or sweet.
  • Country sausage gravy mix: I like the flavor of the country sausage variety but you can also use plain country gravy mix. You’ll also need the amount of water on the package.
  • Crescent dough sheets: Any brand of refrigerated crescent dough will work perfectly. The cans are also a great substitute if you can’t find the sheets. In a pinch you could use refrigerated pizza dough.
  • Eggs: These are key for the soft scrambled eggs on top!
  • Heavy cream: Adding heavy cream to the eggs gives them an extra creamy texture. 
  • Seasoning: I keep it simple and use salt and pepper.
  • Butter: You do not need a lot of butter for this breakfast pizza recipe so it doesn’t matter if it’s salted or unsalted. I use whatever I have on hand. 
  • Cheese: Colby and Monterey jack blend is my favorite for this but you can use another flavor like cheddar if you prefer.
  • Bacon: Use any variety and cut of bacon that you enjoy.

How to Make Breakfast Pizza

This simple recipe for homemade breakfast pizza is so easy to make any time!

  • Cook sausage. Heat a large skillet over medium-high heat and add the ground sausage. Cook until no longer pink.
  • Make gravy. Follow the package directions and make the gravy. Add the cooked sausage crumbles to the gravy and set it aside.
  • Preheat oven. Preheat your oven to 375 degrees F.
  • Prepare pan. Grease a 10×15 baking sheet with non-stick cooking spray or a light coating of oil.
  • Bake dough. Lay out the crescent dough sheets, one on top of the other, to make a thicker pizza crust. Press together and place in the oven. Bake for 8-9 minutes or until the edges brown and set it aside to cool. Don’t turn off the oven!
  • Prepare egg mixture. Add eggs, heavy cream, salt, and pepper to a large bowl. Whisk until combined.
  • Cook eggs. Heat the same skillet used for the sausage over medium heat and melt the butter. Pour in the eggs and allow them to cook, stirring occasionally. Set them aside once cooked.
  • Build pizza. Spread the sausage gravy over the crescent crust evenly and spoon the scrambled eggs over the top. Sprinkle with cheese and chopped bacon.
  • Bake. Place in the oven and bake for 5-6 minutes or until the cheese is melted.
  • Serve. Slice and enjoy hot!

Tips and Variations

  • Spicy: Use ground chorizo or spicy sausage and shredded pepper jack cheese for some heat.
  • Sweet: Ground maple breakfast sausage adds a hint of sweetness that pairs well with the other ingredients.
  • Veggie: Add virtually any vegetables you like, onions, tomatoes, spinach, sliced mushrooms and bell peppers to the eggs for a tasty veggie breakfast pizza.
  • Cheeses: Other options that you can substitute on your pizza are mozzarella cheese, parmesan cheese, and a sharp cheddar cheese.
  • Don’t overcook the eggs. The eggs cook fairly fast and they will become dry if you cook them too long. You are looking to do a soft scramble. If they get a little cold, no worries! They will warm back up in the oven when they are added to the pizza.

Storage Directions

Store leftover breakfast pizza in an airtight container in the refrigerator for 3-4 days. For best results, reheat in the oven or air fryer. The microwave will make the crust mushy and soggy.

  • Cook sausage in a large skillet until it is no longer pink.

  • Make gravy according to directions on the package, then add sausage to the gravy.

  • Preheat the oven to 375 F. Spray a 10×15 inch baking sheet with oil.

  • Place one dough sheet on top of the other on the baking sheet. Press and spread dough to fit the pan and create a slightly thicker edge. Bake for 8-9 minutes; edges should just start to brown. Remove from the oven and set aside. Leave the oven on.

  • While dough bakes, in a large bowl whisk together eggs, heavy cream, salt and pepper. Using the skillet the sausage was cooked in, turn the heat onto medium and add butter. Pour eggs into the melted butter and let it just start to cook the eggs for a minute before stirring with a wooden spoon or a spatula. Stirring the eggs frequently, about every 20-30 seconds gives the best result. If you stir them too often they will stick.

  • Once dough is out of the oven, spread gravy and sausage across the dough. Evenly spoon eggs over gravy. Sprinkle cheese over eggs and top with chopped bacon.

  • Bake for 5-6 minutes or until the cheese is melted.

  • A cup of prepackaged meat lovers crumbles was also tested with this recipe. Just add crumbles to the gravy once prepared and let sit while preparing other steps. There is also the option of turkey sausage crumbles.
  • 2 – 8 oz. cans of crescent rolls can be used in place of the sheets.
  • Pioneer country sausage gravy was used in this recipe.
  • Thick-cut bacon was used in this recipe.
