I’m not a big fruity person in the mornings. You can usually find me with a slice of sourdough toast, smothered with almond butter, and a cup of black coffee. However, recently I was craving some fresh fruit & oatmeal. Nothing too crazy, but definitely out of my “norm”.

This Berry Baked Oatmeal is dairy free, refined sugar free and easy to make.  In less than 40 minutes you will have a delicious breakfast that is great for a crowd, or perfect for a week of breakfasts just for you!  (My husband and I often divide it up and place small portions into Tupperware so he can take some to work, as well.)

WHAT INGREDIENTS DO I NEED?

  • 2 ¼ cups old fashioned oats
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup fresh blueberries
  • ⅓ cup fresh raspberries
  • ½ cup fresh strawberries
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1 ½ teaspoon vanilla extract
  • 1 tablespoon coconut oil- melted
  • ⅓ cup natural maple syrup

HOW DO I MAKE BERRY BAKED OATMEAL?

Start by preheating your oven to 350 degrees F. In a bowl, combine all of the dry ingredients.

In a separate bowl, whisk together all of the wet ingredients.

Spray a 9×9 baking dish with nonstick spray, or lay parchment paper on the bottom.  Pour the dry mixture into your pan then top with the wet mixture. (Make sure the wet mixture seeps into the dry ingredients.)

Next, top the oat mixture with the fresh berries. Bake for approximately 35-45 minutes, or until the oatmeal is slightly firm and golden brown.

This Berry Baked Oatmeal is warm and fruity but not overwhelmingly sweet.  It is the perfect recipe for breakfast or your next brunch gathering.

My kids enjoy a little whipped cream on top, as a special treat!

Berry Baked Oatmeal

Ingredients

  • 1 tablespoon chia seeds

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine all of the dry ingredients.
  3. In a separate bowl, whisk together all of the wet ingredients.
  4. Spray baking dish with nonstick spray, or place parchment paper on the bottom.
  5. Pour the dry mixture into the pan, then stir in the wet mixture, making sure everything is evenly coated.
  6. Top with berries.
  7. Bake for approximately 35-45 minutes.
  8. Remove from oven and let cool.
