A Better S’mores Experience
I love chocolate, graham crackers, marshmallow, and campfires, so it would stand to reason that I’m a pretty big fan of s’mores. The only problem is, I’m not.
While I find the idea of s’mores appealing, I’m almost always disappointed in the execution. Even a fresh-from-the-flames marshmallow is usually not hot enough to properly melt the chocolate, leaving it unpleasantly hard.
I also find the traditional milk chocolate bar in combination with the marshmallow to be tooth-achingly sweet.
And while nothing can beat the flavor of a flame-torched marshmallow, I don’t always want to go through the process of making a campfire (and smelling like campfire) just for an underwhelming s’more.
That’s why we usually make S’mookies, our name for the beloved Graham Cracker Chocolate Chip Cookies we sandwich around toasted marshmallows or Banana S’mores Boats, an endlessly versatile dessert that’s always properly gooey.
But what about when you need s’mores in a hurry? Or it’s rainy and gloomy outside? Enter: The S’mores Casserole–a layered, baked s’more that solves all the issues I have with this classic dessert in one simple recipe.
This S’mores Casserole is:
- Not too sweet– using semi-sweet chocolate rather than milk chocolate is an instant improvement.
- Always ooey gooey– no hard chocolate chunks or underdone marshmallows here!
- Made in the oven– no need to have campfire hair for days, this casserole is in and out of the oven in less than 10 minutes!
Key Ingredients + Substitutions
Graham crackers– You’ll need a few graham crackers crushed on the bottom of the casserole, as well as whole graham cracker pieces for dipping. Honey or cinnamon grahams both work well.
Chocolate chips– We use semi-sweet chocolate chips, but this is just personal preference. You can absolutely substitute chopped Hershey’s bars or your favorite milk chocolate.
Marshmallows– We tested these with both mini marshmallows and big marshmallows and they both work well! If using standard marshmallows, tear or cut them in half and add a minute or two to the baking time.
Dippers– While you can definitely stick to the classic graham cracker, it’s fun to experiment with other dippers as well. We especially love the sweet/salty contrast of pretzels and pretzel crisps or Ritz crackers. You can even dip strawberries or bananas in this s’mores bake!
How to Make S’mores Casserole
Prep. Grease an 8 x 8 inch pan and preheat the oven to 350 degrees.
Layer. Crush 3 full graham crackers and place them in the bottom of the pan. Sprinkle with chocolate chips. Top with marshmallows.
Bake. Bake for 6-7 minutes, or until marshmallows are starting to brown. If desired, broil for an additional 2-3 minutes for extra browning and a crispy top.
Make Ahead and Storage Instructions
This s’mores bake is best made and eaten on the same day. If you do have leftovers, cover with saran wrap and store at room temperature.
Reheat, covered with foil, in the oven at 350 degrees until marshmallows and chocolate are remelted.
Variations
- Make it gluten free! Sub the graham crackers for gluten free graham crackers to make this recipe gluten free friendly. Pamela’s makes a great gf graham.
- Switch up the chocolate! Chop up some Reeses or your favorite candy bar and use it instead of the chocolate chips.
- Add peanut butter! If you love the vibes of our Fluffernutter Ritz Cookies, add some peanut butter chips to the mix and serve with Ritz crackers for dipping.

Preheat the oven to 350 degrees. Spray an 8 x 8 inch square baking pan with nonstick cooking spray or grease with butter.

Bake for 6-7 minutes or until marshmallows are starting to brown. If desired, turn on the broiler for an additional 2-3 minutes to get an extra brown and crispy top.
- Use gluten free graham crackers to make this recipe GF friendly.
- Feel free to substitute 3 chopped milk chocolate bars in place of the chocolate chips.
- If using regular marshmallows, cut or tear them in half and add an additional 1-2 minutes to the baking time.
