So a super easy s’mores-inspired recipe that can be made with my favorite brownie mix in a matter of minutes? Well, you know I’m all in.

These easy s’mores brownies are a combination of two amazing things: gooey s’mores and fudgy brownies.
I have a lot of from-scratch brownie recipes, such as snickers brownies and oreo brownies. But I also have a not-so-secret love for Ghirardelli brownie mixes and use them all the time, too.
My super easy salted caramel brownies are proof of that.
This recipe is one of those secret cheat recipes that combine a Ghirardelli brownie mix with a graham cracker base and melty chocolate and marshmallow topping.
You get the fudgy goodness of the brownies with the gooey topping and the crisp graham crackers. It’s a whole lot of chocolatey deliciousness in one bite.
These easy s’mores brownies are super quick and easy to make, too, so you can whip them up at a moment’s notice for last-minute parties or surprise guests.

How to make these easy s’mores brownies
Ready to see just how easy these s’mores brownies are to make? But they’re so good, no one will guess how simple they were to throw together.
Ingredients you’ll need
To make this recipe, you’ll need:
- 5 whole graham crackers
- 1 box Ghirardelli brownie mix
- ¼ cup water
- ¼ cup to ½ cup vegetable oil
- 1 large egg
- ½ cup semisweet or dark chocolate chips
- 1 ¼ cups mini marshmallows
These s’mores brownies are made in an 8×8-inch pan, so you will need 5 whole graham crackers (the entire rectangle) to cover the bottom of the pan.
For the brownie mix, you can use any Ghirardelli mix you like best. The mixes range in size from 18 ounces to 20 ounces depending on the flavor, but they will all work in this recipe.
You’ll also need the ingredients listed on the back of the box to make the brownie batter: water, vegetable oil, and an egg. The amount of vegetable oil needed depends on the mix you buy, so make sure to check and see what you need.
The chocolate chips and marshmallows are for the topping. Mini marshmallows melt best, but you can cut large marshmallows or homemade marshmallows into smaller pieces with oiled scissors.
Making these brownies
To make these easy s’mores brownies, start by lining an 8×8-inch baking pan with foil. Spray with nonstick spray.
Arrange the graham crackers in a single layer in the bottom of the pan. You should be able to fit 4 of the graham crackers in without breaking them apart.
Break the last graham cracker along the perforated lines as needed to make it fit. (Check out the photo to see how I arrange mine.)
Next, make the brownie batter according to the directions on the box. Spread the brownie batter over the graham crackers and bake at 325°F for 35 minutes.
As soon as you remove the brownies from the oven, sprinkle on the chocolate chips followed by the mini marshmallows.
Return the brownies to the oven and bake for an additional 5 minutes, or until the marshmallows are puffed and lightly browned.
Let the s’mores brownies cool for about 20 minutes before cutting and enjoying.
Storage
I really love serving these easy s’mores brownies warm from the oven. But if you have leftovers, they’re still really good at room temperature!
Store leftovers in an airtight container at room temperature for up to 3 days.

Absolutely, feel free to use your own favorite brand of brownie mix if you don’t want to use a Ghirardelli mix. Just make sure that you check what additional ingredients you will need and follow the package instructions for making the batter.
Yes! I recommend cutting large marshmallows into smaller pieces with kitchen scissors you’ve greased with nonstick spray or vegetable oil. This will help the homemade marshmallows melt more like mini marshmallows in the oven.

Arrange graham crackers in a single layer in the prepared pan. You will have to break one of the graham crackers along the perforated lines in order for them to fit snugly into the pan. (See photo below.)

Prepare the brownie batter with the water, oil, and egg according to package directions. Spread the batter evenly over the graham crackers. Bake for 35 minutes. Remove from oven and immediately top evenly with chocolate chips and then add the marshmallows. Bake for an additional 5 minutes or until the marshmallows puff up and are lightly browned.

Cool on a wire rack for about 20 minutes before cutting. Serve warm or at room temperature.
If you use a brownie mix that is not Ghirardelli brand, make sure to refer to the back of the box for the amount of water, oil, and egg needed.
