Why I love this recipe
This is something I’ve made for years. It’s one of my Grandma’s go-to recipes. Kinda of a kitchen sink meal, it’s forgiving if you’re using leftover chicken or vegetables.
My twist on Grandma’s recipe is the easy sauce. It makes it that much easier to make and we love this recipe!

Instructions for easy chicken cobbler

- Preheat your oven to 375°F. Spray 9×13 casserole dish with nonstick cooking spray, set aside.
- In a large mixing bowl, combine the diced chicken, frozen mixed vegetables, cream soup, evaporated milk, diced onions, garlic, Italian seasoning, salt and pepper. Mix to combine.
- Transfer to the prepared casserole dish, spreading it evenly.
- In a medium bowl, mix together the Bisquick baking mix, milk, shredded cheddar cheese, melted butter, garlic powder, stir until just combined.
- Use a spoon to drop tablespoon-sized portions of the mixture evenly over the chicken and vegetable filling in the casserole dish.
- Place the casserole dish in the preheated oven and bake for 230-35 minutes or until the biscuits are golden brown and the filling is bubbly.
- Remove from the oven and allow the cobbler to cool for a few minutes before serving.

One great thing about this chicken casserole recipe is that you can assemble it in the morning. Store it covered in the fridge until you get home from work and are ready to bake it. If it’s cold when you bake add 3-5 minutes to the baking time.
You can test it with a knife or toothpick inserted into the center. If it comes out clean then your cobbler is done! You can also check to see if the biscuit topping has reached a nice golden brown color.
Deb’s tips
- This casserole is a great way to use leftover rotisserie chicken or turkey. If you don’t have leftover chicken, you can bake or poach some chicken breasts or even canned chicken for this recipe.
- Make sure that you spray your casserole dish well with nonstick cooking spray, or you can also grease it with butter or shortening. This makes clean-up so much easier.
- Spread your vegetable mixture into an even layer so that you have a flat surface for your biscuit topping to spread out and create an even crust.
- Don’t pour the biscuit batter onto the casserole. Drop it by spoonfuls to the top of the casserole. If you pour it may sink to the bottom instead of forming a nice crust on top.
Variations
- Feel free to change up the vegetables that you use in the filling. You can use a mixture of green beans, carrots, frozen peas, corn, potatoes, onions, lima beans, or any other vegetables that you want to add to this cobbler.
- I’ve found that using evaporated milk gives casserole a deep rich flavor. You can use regular milk instead if you don’t have a can on hand, but give the evaporated milk a try if you have it makes a difference. It’s so much creamier!
- Swap out the Bisquick for a box of Red Lobster’s Cheddar Bay Biscuit Mix, and be sure that you add in the seasoning packet for even more flavor.
Storage
Refrigerate – Store leftovers in an airtight container in the fridge for up to 3 days. If you don’t have a lid for your casserole dish you can cover it with plastic wrap or aluminum foil to keep it fresh.
Freezer – To freeze, cool the casserole completely and then transfer it to a freezer-safe container. It will stay good for up to 3 months in the freezer. When ready to serve, thaw overnight in the fridge and then reheat until warmed through.
Reheat – The best way to reheat this casserole is in the oven at 350 degrees f for 20-25 minutes or until warm all the way through. However, you can also microwave individual servings for 1-2 minutes.
