What Is A Hummingbird Cake
The hummingbird cake originated in Jamaica and was a cake named after the island’s national bird called the doctor bird (aka hummingbird). This cake became popular in the southern states in the 1970’s when a recipe for it was published in an issue of Southern Living magazine and has since become known as a southern favorite cake recipe in the United States.
A hummingbird cake is a dense cake typically a 2-3 layer cake made with banana, pineapple, and coconut and frosted with a cream cheese frosting. This Hummingbird Bundt Cake Recipe is a take on the original recipe.
🥘 Hummingbird Bundt Cake Ingredients
All purpose flour
Ground cinnamon
Ground allspice
Baking soda
Salt
Overripe bananas
Crushed Pineapple
Shredded coconut
Granulated sugar
Brown sugar
Large eggs
Unsalted butter
Vanilla extract
Cream cheese
Confectioners’ sugar
Toasted pecans
Baking spray
🔪 Instructions
- Preheat oven to 350F and generously coat an 8’’-10’’ Bundt pan with baking spray.
- In a medium bowl, combine the flour, cinnamon, baking soda, salt, and allspice, set it aside.
- In a large bowl, using an electric mixer, combine the butter, brown sugar, and granulated sugar until smooth and creamy.
- Mash the bananas in a separate bowl. Stir the crushed pineapple into the mashed bananas
- Add the banana mixture to the creamed sugar mixture, mixing on medium-high speed until all the ingredients are well combined.
- Using a large rubber scraper, gradually fold in the dry ingredients to the wet ingredients until they are just combined.
- Pour cake batter into the prepared pan, ensuring that it is ⅔ to ¾ full.
- Bake for 50 minutes, or until a long cake tester inserted into the center of the cake comes out mostly clean.
- Remove bundt cake from the oven and cool cake in the pan on a wire rack for 10 minutes.
- Add the softened cream cheese to a mixing bowl and add the powdered sugar gradually until desired thickness is achieved.
- You can spoon the frosting to the cake or you can add it to a piping bag with a large hole cut for thicker frosting. Slowly add the frosting to the crown of the cake allowing for a variety of drips to form.
- Top the frosting with the chopped pecans.

Cherry version: add ½ cup chopped maraschino cherries to the cake batter.
Mini bundt cakes: use mini bundt pans to make a smaller scaled version of the bundt cake making sure to adjust baking time (should take less time for smaller bundt pans).
Pina Colada Hummingbird Bundt Cake: substitute rum extract for the vanilla extract.
💭 Tips
- Vegetable oil or coconut oil can be substituted for the melted butter.
- If you only have pineapple chunks, process the entire can (including juice) in a food processor until the pineapple has shredded (5-6 pulses).
