Gluten Free Low Carb Keto Pumpkin Bread Pudding


This easy keto Pumpkin Bread pudding is sugar-free, low carb, grain free and so healthy it could be enjoyed, not only for a delicious dessert recipe, but for a perfect breakfast! Just 2 g net carbs per serving!

Keto Pumpkin Bread Pudding

Prior to my low carb sugar free eating way of life, well before 2006, I really loved a warm bread pudding. Once I went low carb in 2006, then gluten free in 2012, I thought my bread pudding days were sadly over.

But I realized that as long as I had a great low carb bread, I could easily make a better version that I could enjoy without guilt. It was the first thing I set out to do in order to create a fantastic low carb bread pudding recipe. 

I made this low carb bread pudding recipe the first time back in November of 2014!!

I decided it was time to update the old photos and update the pumpkin bread recipe I originally used as well. I opted to swap in my new keto high protein cottage cheese pumpkin bread recipe and it worked fabulously! 

Bread pudding doesn’t have to be full of sugar or high in carbs to be just as comforting and just as equally delicious.

This easy keto bread pudding is the perfect low carb dessert that is totally satisfying using my newest and in my opinion best keto pumpkin bread recipe.

The pumpkin mixture is a combination of canned pumpkin puree with heavy cream, eggs and pumpkin spices!

I think this would be a wonderful, make ahead, Christmas morning breakfast for the family!

Carbs in Bread Pudding

According to the Cronometer app, 4 ounces or about ½ cup of traditional bread pudding has 31.7 grams of total carbs, 18.5 grams of sugar and1 gram of dietary fiber. Way to high to enjoy on a keto diet and will kick you out of ketosis.

No need to feel FOMO (fear of missing out) on your low carb diet when you can make a fabulous bread pudding at home!

This is what I’ve been doing since 2006 and in my opinion the best ways to conquer self sabotage and FOMO is to recreate all your favorites in a low carb way!

I love the way this keto bread pudding recipe puffs up when baked in the oven! Perfect comfort food with healthy fats, but healthy enough to eat for breakfast with 8 grams of protein and 3 total carbs per serving!

Can I make this dairy free?

​Yes, you can make this bread pudding recipe with a few changes needed with dairy-free options. You will need to use this dairy free cloud bread recipe to replace the cottage cheese pumpkin bread recipe.

Add pumpkin spices to dry ingredients for the bread. Also swap out the heavy cream with canned coconut cream, coconut milk or unsweetened almond milk in this bread pudding recipe. 

Can I change the low carb sweetener?

You can use any low carb sweetener you like in any of my recipes. I have a great Natural Sweetener Guide & Conversion chart to help you choose another option.

I use Monk Fruit Allulose brown sugar substitute for many of my keto recipes for the pumpkin season as I think it provides the best results and it’s just a great alternative to using brown sugar. 

​If you want to use another low carb sweetener, you certainly can. I like using two kinds of keto sweeteners because it helps alleviate aftertaste.

This is why I also added some pumpkin liquid stevia, but if you don’t have that or don’t like stevia, the better option is to just use another low carb brown sugar sweetener. 

You could use coconut sugar, since I get asked that often, but I will remind you that coconut sugar is still sugar though it’s less refined than white sugar and it will still spike blood sugar, cause cravings and will increase your carbs.

Can I use any bread for this?

I opted to give this bread pudding more pumpkin pudding flavor so that’s why I chose to use my new cottage cheese pumpkin bread recipe, but you can certainly use any low carb keto bread recipe you like.  

I would also recommend adding more pumpkin pie spice, maybe double the amount if you are not using a keto pumpkin bread.

Instructions

  • Cut bread into cubes and lay on a baking sheet, leave on your counter, uncovered, to dry out 2-4 hours or overnight.

  • Preheat oven to 350 degrees.

  • In a large mixing bowl, whisk together all wet ingredients except optional pumpkin seeds. Set aside.

  • Place bread cubes into the baking dish.

  • Pour egg cream mixture over cubed bread.

  • Top with optional pumpkin seeds and chocolate chips if desired.

  • Bake 30 minutes or until center is cooked through, check if a skewer in center comes out clean and the top is golden brown.

  • Enjoy warm or allow to cool, cover with plastic wrap then refrigerate.

  • Keep refrigerated until ready to serve.

  • Top with sugar free whipped cream and sugar free maple syrup.

  • Store leftovers in an airtight container in the fridge for up to 7 days.
