For this carrot and swede mash recipe, you will need:
Ingredients
To create this root vegetable mash, gather the following ingredients:
- 900 g Swede
- 900 g Carrots
- 50 grams Butter or dairy-free alternative
- Salt and Pepper
Swede and Carrots
Carrot and swede (also known as rutabaga, Swedish turnip or neep) are the main ingredients in this vibrant root vegetable mash. These two veggies, with their unique flavours and textures, blend seamlessly.
The sweetness of the carrot is perfectly balanced by the earthy tones of the swede, creating a harmony that will tantalise your tastebuds. We like to go for a 50/50 mix.
But the beauty of this recipe lies in the ability to make it your own by adding more vegetables. You can easily include other root vegetables into the mix for an added depth of flavour or texture.
Parsnips lend a slightly spiced note, and turnips give a subtle peppery taste to the finished dish. Adding a sweet potato or normal potato will help make a very creamy, smooth mash more like a mashed potato texture.
Don’t shy away from experimenting with different combinations until you find your perfect blend.
Butter
Butter adds a rich, creamy texture to this carrot and swede recipe, transforming the dish’s taste and mouthfeel. Make sure to use it at room temperature.
If you follow a vegan or lactose-free diet, don’t worry. You can still enjoy the same creamy goodness with dairy-free butter made from plant-based ingredients like coconut, avocado, or olive oil. Here are some butter alternative ideas.
Salt and Pepper
Elevate the flavour of this vegetable mash by incorporating salt and a sprinkle of pepper.
If you’re in the mood for an adventurous twist, consider introducing other spices, such as smoked paprika, for a hint of warmth or perhaps a touch of cumin to infuse an earthy richness.
Optional Extras
Here are some optional add ins to swede and carrot mash.
Cream/Milk
Introducing just a bit of cream or milk into your dish will help make a creamy, velvety texture.
Herbs
To enhance the flavours, we usually sprinkle a handful of fragrant herbs like thyme, parsley, or rosemary on the surface.
Instructions to Make Mashed Carrot and Swede
Here’s how to make carrot and swede mash recipe.
Prepare
Fill a large saucepan with water, add salt, and bring to a boil.
Cut the peeled vegetables into approximately 1-inch cubes. This helps the vegetables cook quickly.
Cooking Time
By the time you have chopped all the root vegetables (that swede is hard to cut), your water will be boiling!
Add the diced carrots and swede into the boiling salted water.
Cook the vegetables for 20-25 minutes until they’re soft enough to mash. Some vegetables take longer than others.
Stirring occasionally to ensure even cooking.
Use a fork to test when done. They should be tender all the way to the centre.
Drain the cooked carrots and swede in a colander. Allow them to air dry for a while to prevent making the mash watery.
Mash
Put the cooked carrot and swede cubes back into the pot.
Season with salt and pepper according to your taste.
Add the room-temperature butter to the pan. Do not add it cold, as it will affect how the veggies mash.
You can always melt it first if needed.
Use your potato masher to mash the butter and vegetables to your desired consistency.
Add small splashes of warm milk or cream or extra melted butter if required for a smoother mash.
Dish Up
And that’s it! That’s how you make a comforting, easy carrot and swede mash. This dish is a wonderful blend of swede and carrots, resulting in a delicious, lighter alternative to traditional mashed potatoes.

FAQs
Ensure that the vegetables are not overcooked, and allow them to air dry briefly after boiling.
One of the most common causes is undercooking the vegetables. If they haven’t been boiled until tender throughout, they will resist mashing and create lumps in your root vegetable mash
I highly recommend opting for a hand masher or ricer tool when mashing. This method may indeed require a bit more elbow grease, but the outcome is undeniably superior to using a hand blender or food processor, which can overwork the veggies and make them gluey rather than smooth.
Storage
Storing your leftover swede and carrot mash is a great way to minimise waste and have a quick and easy side dish ready for your future meals.
Fridge
Store any leftovers in an air-tight container in the fridge. This delicious carrot and swede mash will keep for up to 3 days.
Freezer
You can also freeze carrot and swede mash. Let the mash cool completely before transferring it to an air-tight container or freezer-safe bag. It can be frozen for up to 3 months. Defrost before reheating.
Reheating
To reheat, warm it up in a pan over medium-low heat, stirring occasionally until heated through. Or reheat in a microwave, stirring occasionally to ensure it heats through.
