This is one of my “Go To” Weeknight Dinners.
It is so quick and easy to make, especially with a little help from a jar of Rao’s Alfredo Sauce.
Yes, yes I know it’s not a 100% keto product, but it’s about 95%, which is as close as you’re going to get from a jarred sauce; And again, if you choose to make our Alfredo Sauce from scratch, then that is even better.
However for Moms on the go, or people who have a heavy work schedule, Rao’s is a Godsend! Not to mention their Marinara Sauce is known as the tastiest and lowest carb store bought sauce also.
Pair that with our Pesto Sauce and some chicken, and you have yourself a quick delicious weeknight dinner!!
I’ve put the link for the Rao’s Sauces here, However I will be honest in saying that you can buy it cheaper at your grocery store; But for some of you who cannot get it at your store, you can click on the link provided.
INGREDIENTS:
INSTRUCTIONS
- Season the chunks of chicken with salt + pepper.
- Heat up a large nonstick skillet over med/high heat and add olive oil.
- Add the chicken and saute until it has some color but not fully cooked.
- Pour in your alfredo sauce, stir and allow to come to a low simmer, until chicken is fully cooked.
- Now add in your pesto, stir to fully incorporate, check for seasoning.
- Serve with a few shavings of Parmesan cheese, and some basil leaves for garnish if you want to pretend you spent all day slaving over it!!
