Blackstone Scallops Recipe
Known for their rich, buttery flavor and delicate texture, scallops cooked on a Blackstone griddle are a perfect match. This cooking method emphasizes the natural flavors of the sea scallops, enhancing them with just a touch of sea salt and the high heat of the griddle to achieve a perfect golden crust. Whether you’re an experienced seafood chef or new to cooking scallops, this recipe is straightforward, requiring only a few ingredients but delivering a dish that’s bound to impress.
Cooking scallops on a Blackstone griddle is not only about achieving that ideal sear but also about preserving the scallops’ succulent interior. This technique allows the scallops to develop a wonderfully crisp exterior while maintaining their moisture and tender texture inside. The use of avocado oil is a smart choice due to its high smoke point, ensuring the scallops cook perfectly without the oil burning. This recipe is a perfect example of how minimal ingredients can lead to maximum flavor when the cooking method is executed correctly.
Do you love teppanyaki, where you sit around a large flat-top cooking surface, and a chef puts on a show, cooking right in front of you and tossing bits into the braver mouths of the group? This is one of those classic dishes that will bring you right back there.
Did you know sometimes teppanyaki is mistakingly referred to as hibachi? Hibachi cooking is done with a round, open-grate grill with a heat source underneath. Typically, it is a live wood fire, but other heat sources can be used too.
Why you’ll love this dish…
- Simplicity: Requires minimal ingredients and steps.
- Flavorful: Achieves a rich, caramelized crust without overpowering the scallop’s natural taste.
- Healthy: Uses avocado oil, which is known for its health benefits.
- Quick: The entire dish comes together in about 10 minutes, perfect for a busy weeknight.

Blackstone Scallops FAQ
How do I store leftovers?
Ideally, you won’t have leftovers. Scallops are really meant to be eaten as soon as they are cooked. If you do make a few too many, store in an airtight container in the refrigerator for up to 2 days.
Can I reheat this dish?
Yes, but gently and preferably on a skillet with butter over low heat to avoid overcooking. An Air Fryer can also be used. I recommend putting the scallops in a foil boat with some butter for this method as well, and air frying at a relatively low temp.
