Being someone who has been following a Ketogenic Lifestyle for a long time now, I can tell you one easy way to enjoy your diet is to find new ways to add flavors to your low-carb meals. Today, I am sharing one of my favorite vegetarian recipes with you: Keto Grilled Eggplant.
I know, I know, eggplant is not everyone’s preference when it comes to grilled food. But trust me, this recipe turned out to be good that you’ll change your mind. Even my fussy kids, who once turned their noses up at eggplant, have started liking it.
When it comes to choosing a low-carb vegetable, eggplant is a good option. Many people find its flavor and texture a little off-putting. But if prepared right, it can turn into a delicious treat.
My grilled eggplant recipe is a good example of this. It is easy to prepare, full of flavor, and perfect for someone on a keto diet. And, it also gives you an easy way to sneak in fresh veggies into the pickiest eaters’ diets.

Ingredients
- 2 medium Eggplant, about 400gms raw
- 3/4 tsp Garlic powder
- 1/2 tbsp Italian seasoning
- 6 tbsp Olive oil
- 1/4 tsp Black pepper
- 3/4 tsp Sea salt
Instructions
- Preheat your cast iron grill pan or grill on medium flame.
- Slice the eggplant in circles (around 1/2 inch thick). I recommend removing the leafy end only after slicing; it gives a better grip while cutting.
- Now, take a small bowl to mix olive oil, garlic powder, and Italian seasoning. Brush around half of this mixture onto eggplant slices. And, add sea salt and black pepper to the remaining mixture.
- Flip the slices and apply the mixture to the other side.
- Now, place eggplant slices on a grill pan or a grill in a single layer. If you are using a grill pan, you can spray it with some cooking oil and cook the slices without a lid. But if you are using a grill, you need to close its lid. I would suggest grilling eggplant for 3–5 minutes per side until it’s tender, charred, and a little brownish.
