Keto Lasagna Noodles
Carbs in traditional lasagna noodles are quite high for anyone following a keto diet with 17 grams of carbs just for the noodle. I’ve got plenty of low carb lasagna noodles that work really well for a delicious authentic tasting lasagna with a lot less carbs!
Zucchini slices also work great as lasagna noodles, like in this low carb lasagna recipe I made a few years ago. But it’s a bit more work to cut the zucchini slices and thin to use like classic lasagna sheets. Also if you don’t precook the zucchini it can tend to make it a watery lasagna.
Hearts of palm also makes mock lasagna noodles and I think are easier to use than making zucchini noodles for lasagna since you won’t have to slice anything, They come in packaged form on Amazon.
I’ve also used layers of pre boiled cabbage instead of zucchini layers and liked it even better since it is so thin and light between the layers of meat and ricotta cheese layers.
Another option for a low carb lasagna is using eggplant slices but again, like zucchini, need to be pre baked to soften them before using as low carb lasagna noodles.
I’ve also made a high protein keto lasagna using Egglife wraps to replace regular lasagna noodles and the whole family loves that easy recipe as well!
I have tried using deli meat like turkey and chicken but my family and I did not feel it held up as well as the most popular recipes I’ve already shared.

Cottage Cheese Lasagna
I’m a Sicilian Italian and love ricotta cheese, especially for a keto lasagna recipe.
It’s got high protein just as cottage cheese is but does have more carbs and more fat than using a cottage cheese mixture for a low-carb lasagna. But ricotta can be swapped for the cottage cheese in this recipe if you prefer.
Typically a traditional lasagna ricotta mixture adds eggs and parmesan cheese. I decided to skip the eggs and parmesan since the folio cheese wraps I used were made of just Parmesan.
Pasta Sauce Options
The Rao’s brand is a low carb marinara sauce which is a low sugar marinara sauce and can be found in almost every market.
I also have my own homemade low carb marinara sauce that is easy and tasty and even better than store bought in my opinion.

It’s still a good size serving and has 39 grams of protein and just 4 grams of net carbs!
Do I have to use a sheet pan?
No, if you’d rather use a casserole dish instead of a sheet pan that will still work. I find it’s easier to use a sheet pan to remove the thin layers of cheese and meat on a sheet pan rahter than deep baking dish since this is different than my other easy lasagna recipes and doesn’t have a lot of layers.
Can I swap the ground beef?
Yes you can swap out the ground beef with ground sausage or ground pork, lean ground turkey or ground chicken.

Preheat oven to 400 degrees F. Lightly grease with extra virgin olive oil cooking spray a 12 by 17 baking sheet pan. Set aside.

Add the ground beef to a large skillet over medium high heat and cook until browned. Season with salt, pepper, garlic and onion powder then add marinara sauce and stir to combine. Cut 2 folio cheese wraps into 2 inch squares and toss into meat sauce mixture. Turn off heat and set aside.

In a large bowl, place the cottage cheese, 1 cup mozzarella cheese, Italian seasoning and salt. Stir to combine. Set aside.

Lay 3 folio cheese wraps onto sheet pan. Cut another folio wrap in half to cover spaces on sheet pan.

Spread meat sauce mixture over the folio wraps on the sheet pan.

Dollop spoonfuls of cottage cheese mixture and spread over the meat sauce.

Sprinkle with remaining 1 cup mozzarella cheese.

Bake for 15 minutes. Remove and allow to cool slightly for about 5 minutes then divide into 8 servings.

Store any leftover sheet pan lasagna in an airtight container in the fridge for up to 3 days or can be frozen for up to 3 months.
