Process Overview: How To Make Creamy Chicken and Mushrooms in One Pan Step-by-Step

Step 1 – Cut And Season The Chicken
Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets (or use thin-cut chicken breasts). Season each breast with salt, black pepper, and Italian seasoning.
Step 2 – Cook The Chicken
Heat a large skillet over medium heat and add the olive oil and 1 tablespoon of butter. Once the skillet is hot, add the chicken and cook on each side until golden brown and cooked through, about 4 minutes per side. Remove the cooked chicken to a clean plate and cover with foil to keep warm.
Step 3 – Saute The Veggies
Once the chicken is removed, add the remaining 1 tablespoon of butter to the same skillet. Add onion and garlic and sauté until soft and fragrant. Then, add mushrooms and sun-dried tomatoes and continue sautéing until tender, about 3-4 minutes. Add the wine, and deglaze the skillet using a wooden utensil with a flat head to scrape all of the stuck bits of chops off of the bottom of the pot. Let the wine reduce for 3 – 4 minutes.
Step 4 – Make The Sauce
Pour the chicken broth, heavy cream, and cream cheese into the skillet; mix to combine. Stir and scrape up any brown bits from the bottom of the skillet. Reduce heat to low and allow the sauce to simmer in the skillet for 8-10 minutes, or until it has reduced and thickened by about 50%. Taste the sauce adjust seasoning by adding salt and pepper if necessary.
Step 5 – Return The Chicken To The Skillet
Finally, return the cooked chicken breasts to the skillet and spoon the creamy sauce over top. Allow the chicken to heat through for about 2 -3 more minutes. Serve with fresh chopped parsley, if desired.
